Vinification
The grapes are de-stemmed, crushed, and gravity fed with their skins into large wooden vats for spontaneous fermentation using only the naturally present local yeasts. The grapes are macerated on their skins for close to three months at 22 to 25 degrees Celsius. Pigeage, the breaking of the solid must cap, is done at least three times a day. The wine also undergoes malo-lactic fermentation. After gentle pneumatic pressing it is aged for two years in old large (1000 and 2500 liters) oak bottle.

“10 wines to try before you die” by Margaret Rand in Decanter December 2018 issue:
“101 wines to try before you die” by Margaret Mead: “I love a sense of authenticity… this is to do with a sense of risk, a sense of individuality — a sense of place, yes, but also a feeling of energy. It is the opposite of the safe, the industrial, the reliably crowd-pleasing.” Thank you #margaretrand for Including our Sv. Jakov in your new book “101 wines to try before you die” – the quote above captures our philosophy exactly! #101winestotrybeforeyoudie
