Ottocento Pinot Grigio
The Pinot Grigio needed it’s own story in the heart of Krasica. The wine shows the fun side of Clai and the playful nature with which wine can be perceived. It is neither a rose, a white, an orange or red wine, it is Ottocento Pinot Sivi. The wine has a spice to it that comes from the use of skin maceration and a complexity due to the extended aging in barrel. It is a wine that is not confined to a season or an occasion. It is there to be shared with wine lovers alike.

Vinification
Ottocento Pinot Grigio is macerated and fermented on the skins between 5-10 days depending on colour intensity. The fermenting juice is then pressed and put back into the original large wooden tank. The wine is racked after malolactic fermentation and aged in old Austrian oak for two years. The result leaves you with a textured silky touch of tannins that round the pallet and is harmonised with the burst of flavour, that is accustomed with Pinot Grigio. The wine turns a strawberry blond overtime that highlights it can be enjoyed in any season.
Wine production: Fermentation on the skins in op-en vats, without the addition of selected yeasts and enzymes
