Grapes are handpicked. Malvazija and Chardonnay are directly pressed after fermentation and added to Plavina and then everything together macerates for a few days. After pressing, the rest of the fermentation finishes in inox barrels and then wine ages a year, part in inox, part in wooden barrels. After a year, before bottling we add young wine to start fermentation in the bottle. The wine is aging cca two years in the bottle on its own sediment after which it is degorged with any added liquer. Because of that we have sparkling brut natur.
