Vinification
The grapes used in crafting this sparkling wine are carefully handpicked between 6am and 1pm. After fermentation, Malvazija and Chardonnay undergo direct pressing and are blended with Surina. The grapes macerate together for a few days, infusing the wine with their distinct characteristics. The pressing is followed by fermentation in stainless steel vessels, where the wine ages for a year. Some of the wine is also aged in wooden barrels during this time, adding complexity to the final blend. Before bottling in the new year, a fermenting batch of Chardonnay is added to initiate fermentation in the bottle. The wine then ages for about two years on its own sediment, developing richness and depth. Finally, disgorgement removes the sediment and achieves the sparkling brut nature. This meticulous multi-step approach ensures the wine's exceptional quality and refinement.
